Potato Christmas Bruschetta

Ingredients

  • 2 Medium Potatoes (360g), with skin
  • 1 tsp. Olive Oil
  • Ingredients for Toppings Per Potato:

  • Cinnamon Delight: 4 tsp. Peanut Butter, 2 small bananas (180g) sliced & a sprinkle of cinnamon
  • All About the Avo: ½ Small Avo (60g), 4 tsp. Tomato Chilli Jam & ½ Small Red Onion thinly sliced
  • How’s My Hummus: 4 Tbs. Hummus, 8 Sliced Pepperdews & Sprinkled with 8 Roasted Raw Almonds roughly chopped

Directions

  1. Preheat the oven to 200°C. Cut potatoes lengthwise into thin slices, about 0.5cm thick.
  2. Coat with olive oil and place on a baking sheet with a little room between each slice.
  3. Bake for about 10-15 minutes, flip slices over and bake for another 10-15 minutes or until a fork can easily pierce the potato. Don’t overcook or the potato toast will become mushy.
  4. Remove from oven and spread with your toppings of choice and enjoy!
