Potato and Chorizo Soft Tacos

Directions
- Cook the potato in boiling salted water for 10 minutes or until just tender, drain and set aside.
- Heat the Olive Oil in a frying pan over medium heat, add the chorizo and sauté until brown.
- Using a slotted spoon, transfer chorizo to a plate, leaving oil in pan.
- Add potato and onion, sauté for 5 minutes, stir in the spices, chorizo and coriander to warm through and season to taste with sea salt and ground black pepper.
- Serve spooned into tortillas with Salsa, Guacamole and grated cheese.
Ingredients
- 600 g Floury Potatoes, peeled and cubed
- 2 tbsp Olive Oil
- 1 Chorizo sausage, skin removed, coarsely chopped
- 1 Red Onion, thinly sliced
- ½ cup Coriander Leaves, coarsely torn
- 1 tsp Cumin seeds
- ½ tsp Chilli Flakes
- ¼ tsp Cinnamon powder
- To serve: Flour tortillas, fresh tomato salsa, Guacamole and grated mature cheese.
