INGREDIENTS

Dressing
 150 ml ready bough mayonnaise
 45 ml (3 tbsp) plain yoghurt
 15 ml (1 tbsp) wholegrain mustard
Baby potato salad
 2 large potatoes, skin on cooked and cubed
 3 gherkins, chopped
 5 radishes, thinly sliced
 2 celery stalks, finely diced
 4 hard-boiled eggs, diced
 45 ml (3 tbsp) fresh chives, snipped
 Ground black pepper, to taste

Stir the dressing ingredients together

Add all the potato ingredients as well as the mixed dressing in a large mixing bowl and gently stir to combine, garnish with some extra chives, and serve with the lamb, together with creamy spinach and mushroom
