Fill a pot with water, place on stove and allow to boil. When water is boiling, place potato in the water with its jacket.
Finely cut the onion; julienne the carrots and chop the parsley.
When the potato is cooked through; start mashing it, complete with skin, while still hot.
Place finely chopped onions and milk into the potato and mash till as smooth as possible.
Add salt and pepper, and then fold lentils into the mash.
Place an elegant mound onto a plate.
Place the julienne carrots on top and sprinkle with chopped parsley.
