INGREDIENTS

 4 potatoes, with the skin on
 Salt, to taste
 Thousand Island dressing

DIRECTIONS

Cut the sides and edges of the potatoes to make a square then cut them into thickish sticks

Put the cut potatoes in a colander and run cold water to rinse off the starch from the surface

Bring a large pot of salted water to the boil and add the potatoes, reduce the heat and simmer to the point where the potatoes are almost falling apart (+/- 20 minutes)

With a slotted spoon, remove the potatoes and place them on a cooling rack

Allow them to drip dry (+/- 20 minutes)

Freeze them for about 1 hour so that they are completely dry

Heat enough oil to fry the potatoes at 130°C until they are a little puffy and just coloured (+/- 5 minutes)

Drain them well and freeze them for a further hour

Heat the oil once again to 180°C and refry the potatoes until crunchy and golden (+/- 8 minutes). Drain.

Sprinkle with salt and serve with a Thousand Island dressing
