Baked potatoes & fruity haddock bake

Directions

  • Preheat the oven to 180°C and place the fish in a baking tray.
  • Mix the onion, egg, milk, lemon juice, chutney, and salt and pepper.
  • Pour the egg mixture over the fish, sprinkle with cheese and bake for 30 minutes.
  • Place under the grill to brown for a few more minutes.
  • To make the potatoes, scrub the potatoes until clean leaving the skin on. Cut into wedges and rub with a small amount of olive oil. Place in the oven and bake until crispy and golden, about 30 minutes.
  • Serve the fish with the baked potatoes and seasonal fresh vegetables.
  • This can be a healthier “fish & chips’ dish – grilled fish is healthier than the traditional fried fish and it can be served with oven-baked potato chips, as an alternative to deep fried potato chips! The kids will love this dish too.

Ingredients

  • 6 haddock steaks
  • 1 onion, grated
  • 1 large egg, beaten lightly
  • 150 ml low fat milk
  • 2.50 ml (½ tsp) lemon juice
  • 30 ml (2 tbsp) mild chutney
  • 100 ml mozzarella cheese, grated
  • Salt and freshly ground black pepper, to taste
  • 6 potatoes
  • 10 ml (2 tsp) olive oil
