Baked potatoes with crispy garlic chicken and broccoli

Serves: 4-6 TIP: Don’t love broccoli? Why not replace it with some red or green pepper?

Directions

  • Pre-heat the oven to 200°C
  • Dry the potatoes and chicken well by patting dry with a paper towel, then place in a roasting pan along with the onions.
  • In a small bowl combine the vegetable oil, lemon juice, garlic, mustard, brown sugar, chicken spice, salt, pepper and parsley and stir well.
  • Pour over the chicken and potatoes ensuring that it is evenly coated
  • Bake for 45 minutes.
  • Remove from the oven and place the broccoli in the roasting tin.
  • Bake for an additional 15 minutes.

  • 4 lbs Chicken thighs
  • 4 Chicken drumsticks
  • 4 Potatoes, peeled, quartered
  • 2 Onions, peeled, quartered
  • ¼ cup Oil, vegetable
  • ¼ cup Lemon juice
  • 1 tbsp Garlic, crushed
  • 2 tbsp Mustard, Dijon
  • 1 tbsp Brown sugar
  • 1 tsp Salt, fine
  • ½ tsp Pepper, black, fine
  • 2 tsp Chicken spice
  • 2 cups Broccoli florets
