Chive and Paprika Crusted Potato Croquettes

Directions

  • Pre-heat the oven to 180°C/350°F and roast the potatoes for 1 hour.
  • In the meantime make the crusts. Place half of the bread in a food processor/blender with the paprika and blend until red crumbs are formed.
  • Repeat this step with the remaining bread and the chives until green crumbs are formed.
  • Spread the two crust mixtures on a baking tray and place in the oven with the potatoes for 10 minutes to dry out. Remove and set aside.
  • Allow the potatoes to cool slightly, remove their skins and using a potato masher, mash them with the butter and cream and season well with salt.
  • Shape the mashed potato into a 3.5cm thick roll and cut into individual croquettes.
  • Roll half the croquettes in the red crumbs and the other half in the green crumbs.
  • Place on a baking tray and bake for 10-15 minutes at 160oC/320oF. Serve warm.
