Fried croquettes wrapped in smoked salmon

Directions

  • Mix all of the ingredients for the croquettes in a large mixing bowl and spoon into a piping bag.
  • Heat oil in a pot and squeeze long fingers of potato mixture into the hot oil and fry until golden, about 2 minutes.
  • Remove and drain. Season.
  • Wrap the salmon around the croquette and serve with a dollop of sour cream and lemon wedges.
