Hearty potato & beef stew

Directions
- Heat the oil in a saucepan and over medium heat cook the onions until soft.
- Add the curry powder, garlic mix and continue to cook for a further minute.
- Add the meat and cook until well browned. Next add the tomatoes, potatoes, and herbed water.
- Stir well and allow to simmer with the lid on, for 25 – 30 minutes whilst stirring occasionally.
- Add the mixed vegetables and simmer for a further 5 minutes.

- 30 ml Canola oil
- 1 Onion, chopped
- 15 ml Mild curry powder
- 10 ml Ginger and garlic mix
- 3 Medium potatoes, skin on and quartered
- 500 g Stewing beef with bone in – remove all visible fat
- 2 Tomatoes, chopped
- 500 ml Water
- 5 ml Dried thyme
- 500 ml Frozen mixed vegetables
