Hearty potato & beef stew

Directions

  • Heat the oil in a saucepan and over medium heat cook the onions until soft.
  • Add the curry powder, garlic mix and continue to cook for a further minute.
  • Add the meat and cook until well browned. Next add the tomatoes, potatoes, and herbed water.
  • Stir well and allow to simmer with the lid on, for 25 – 30 minutes whilst stirring occasionally.
  • Add the mixed vegetables and simmer for a further 5 minutes.

Ingredients

  • 30 ml Canola oil
  • 1 Onion, chopped
  • 15 ml Mild curry powder
  • 10 ml Ginger and garlic mix
  • 3 Medium potatoes, skin on and quartered
  • 500 g Stewing beef with bone in – remove all visible fat
  • 2 Tomatoes, chopped
  • 500 ml Water
  • 5 ml Dried thyme
  • 500 ml Frozen mixed vegetables
