Jacket Potatoes with creamy mushroom sauce

Directions
- Preheat oven to 180C
- Place potatoes on a baking tray, rub salt and olive oil on them.
- Prick the potatoes with fork
- Cover with foil and bake for 40 minutes.
- In the meanwhile, heat a little oil in a pan, sauté spring onion until translucent, and then add mushrooms and sauté for two minutes.
- Season for taste.
- Add sour cream and cook for another 3 minutes until slightly loose.
- Remove foil and quickly return for another 5 minutes.
- Cross slit open the top of potatoes and pour creamy mushrooms on top.
- Serve!

- 4 large floury potatoes, washed and dried
- Olive oil
- 3 spring onions, finely chopped
- 100 g mixed mushrooms, finely chopped
- Salt and black pepper to taste
