Jacket Potatoes with creamy mushroom sauce

Directions

  • Preheat oven to 180C
  • Place potatoes on a baking tray, rub salt and olive oil on them.
  • Prick the potatoes with fork
  • Cover with foil and bake for 40 minutes.
  • In the meanwhile, heat a little oil in a pan, sauté spring onion until translucent, and then add mushrooms and sauté for two minutes.
  • Season for taste.
  • Add sour cream and cook for another 3 minutes until slightly loose.
  • Remove foil and quickly return for another 5 minutes.
  • Cross slit open the top of potatoes and pour creamy mushrooms on top.
  • Serve!

  • 4 large floury potatoes, washed and dried
  • Olive oil
  • 3 spring onions, finely chopped
  • 100 g mixed mushrooms, finely chopped
  • Salt and black pepper to taste
