Mash and Cheese Bites

Serves: 4-6 Tip: Add an extra melty surprise by adding a cube of cheese to the centre of each ball when rolling.

Directions

  • Peel the potato and cut into 1/8ths.
  • Boil the potatoes in boiling water and drain well. Allow to cool well ensuring that all the water is completely drained.
  • Mash the potatoes until completely fine.
  • Add milk and stir through. Place in the refrigerator to cool completely.
  • In a mixing bowl combine the cooled mash with the cheese, bacon, green onion salt and pepper and mix well.
  • Add the egg and stir until incorporated.
  • Scoop out heaped tablespoons and roll them into balls.
  • Pre-heat the oven to 200°C.
  • Prepare a baking sheet by lining it with baking paper.
  • Create a breading station by placing the flour in once bowl, whisking the egg in a second bowl and placing the crumb and parmesan in a third bowl.
  • Dredge each ball in flour, then egg and then in breadcrumbs before placing on the prepared baking sheet.
  • Drizzle with oil and place in the oven. Bake for 15 -20 minutes or until golden brown.

  • 6 Potatoes, floury (Caren, Darius and Avalanche), medium
  • ¼ cup Milk, full cream
  • ½ cup Cheese, cheddar
  • ¼ cup Bacon bits, crisp
  • 3 tbsp Green Onion, sliced
  • ½ tsp Salt, fine
  • ¼ tsp Pepper, black, fine
  • 2 Eggs, large
  • 1 cup Breadcrumbs, Panko
  • ½ cup Parmesan cheese, grated
  • 4 tbsp Oil, vegetable
