Mash and Cheese Bites

Tip:
Add an extra melty surprise by adding a cube of cheese to the centre of each ball when rolling.

Directions
- Peel the potato and cut into 1/8ths.
- Boil the potatoes in boiling water and drain well. Allow to cool well ensuring that all the water is completely drained.
- Mash the potatoes until completely fine.
- Add milk and stir through. Place in the refrigerator to cool completely.
- In a mixing bowl combine the cooled mash with the cheese, bacon, green onion salt and pepper and mix well.
- Add the egg and stir until incorporated.
- Scoop out heaped tablespoons and roll them into balls.
- Pre-heat the oven to 200°C.
- Prepare a baking sheet by lining it with baking paper.
- Create a breading station by placing the flour in once bowl, whisking the egg in a second bowl and placing the crumb and parmesan in a third bowl.
- Dredge each ball in flour, then egg and then in breadcrumbs before placing on the prepared baking sheet.
- Drizzle with oil and place in the oven. Bake for 15 -20 minutes or until golden brown.

- ¼ cup Bacon bits, crisp
- 3 tbsp Green Onion, sliced

- ¼ tsp Pepper, black, fine

- 1 cup Breadcrumbs, Panko
