Mashed Potato Fritters
Serves 4. Real hands-on fun to make, so get the kids involved.

Directions
- In a large mixing bowl, combine all the ingredients (except the breadcrumbs, oil and sweet chilli sauce) and mix together well.
- Use your hands to scoop out some of the potato mixture. Form into round patties with your hands.
- Add more flour if you feel that the mixture is too soft.
- Place the breadcrumbs into a shallow dish and dredge each patty to cover well. Refrigerate for about 30 minutes.
- Heat oil in a large frying pan and shallow fry the patties until golden, turning once.
- Serve with sweet chilli sauce.

- 500 ml leftover mashed potatoes
- 125 ml cake flour
- 2.50 ml salt
- 30 ml fresh chives, finely chopped
- 5 ml garlic powder
- 5 ml smoked paprika
- 50 g cheddar, grated
- 150 g breadcrumbs, to coat
- Vegetable oil, to fry
- Sweet chilli sauce, to serve
