Mashed Potato Fritters

Serves 4. Real hands-on fun to make, so get the kids involved.

Directions

  • In a large mixing bowl, combine all the ingredients (except the breadcrumbs, oil and sweet chilli sauce) and mix together well.
  • Use your hands to scoop out some of the potato mixture. Form into round patties with your hands.
  • Add more flour if you feel that the mixture is too soft.
  • Place the breadcrumbs into a shallow dish and dredge each patty to cover well. Refrigerate for about 30 minutes.
  • Heat oil in a large frying pan and shallow fry the patties until golden, turning once.
  • Serve with sweet chilli sauce.

Ingredients

  • 500 ml leftover mashed potatoes
  • 125 ml cake flour
  • 2.50 ml salt
  • 30 ml fresh chives, finely chopped
  • 5 ml garlic powder
  • 5 ml smoked paprika
  • 50 g cheddar, grated
  • 150 g breadcrumbs, to coat
  • Vegetable oil, to fry
  • Sweet chilli sauce, to serve
