Mashed Potato Puffs

Directions

  • In a large mixing bowl, combine mashed potatoes, eggs, feta, lentils, spinach and chives.
  • Season with salt, pepper and nutmeg. Using spray n cook, grease a 12-cup muffin tray and mound a spoonful of the potato mixture into each cup.
  • Bake for 30-35 minutes at 190°C or until golden brown. Cool for 5 minutes before garnishing with a light grating of Parmesan cheese.

Ingredients

  • 3 Large Potatoes (540g), mashed with skin (2 cups)
  • 3 Large Eggs, beaten
  • 180 g Reduced Fat Feta Cheese, crumbled
  • 1 cup Lentils, cooked
  • 125 g Spinach, finely chopped using herb scissors nutmeg
  • ¼ cup Chives, chopped
  • Salt & Pepper to season
  • 1 tsp Nutmeg
  • Parmesan cheese, finely grated for garnishing
