Mashed Potato Puffs

Directions
- In a large mixing bowl, combine mashed potatoes, eggs, feta, lentils, spinach and chives.
- Season with salt, pepper and nutmeg. Using spray n cook, grease a 12-cup muffin tray and mound a spoonful of the potato mixture into each cup.
- Bake for 30-35 minutes at 190°C or until golden brown. Cool for 5 minutes before garnishing with a light grating of Parmesan cheese.

- 3 Large Potatoes (540g), mashed with skin (2 cups)
- 3 Large Eggs, beaten
- 180 g Reduced Fat Feta Cheese, crumbled
- 1 cup Lentils, cooked
- 125 g Spinach, finely chopped using herb scissors nutmeg
- ¼ cup Chives, chopped
- Salt & Pepper to season
- 1 tsp Nutmeg
- Parmesan cheese, finely grated for garnishing
