Mashed potato with lentils and fresh carrots

Directions
- Fill a pot with water, place on stove and allow to boil. When water is boiling, place potato in the water with its jacket.
- Finely cut the onion; julienne the carrots and chop the parsley.
- When the potato is cooked through; start mashing it, complete with skin, while still hot.
- Place finely chopped onions and milk into the potato and mash till as smooth as possible.
- Add salt and pepper, and then fold lentils into the mash.
- Place an elegant mound onto a plate.
- Place the julienne carrots on top and sprinkle with chopped parsley.
- Enjoy!

- 20 g Lentils (in brine)
- 10 g White onion
- 10 g Carrots
- 15 ml Fat free milk
- 5 g Parsley
- 2 g Salt
- 2 g Pepper
