Mashed potato with lentils and fresh carrots

Directions

  • Fill a pot with water, place on stove and allow to boil. When water is boiling, place potato in the water with its jacket.
  • Finely cut the onion; julienne the carrots and chop the parsley.
  • When the potato is cooked through; start mashing it, complete with skin, while still hot.
  • Place finely chopped onions and milk into the potato and mash till as smooth as possible.
  • Add salt and pepper, and then fold lentils into the mash.
  • Place an elegant mound onto a plate.
  • Place the julienne carrots on top and sprinkle with chopped parsley.
  • Enjoy!

  • 20 g Lentils (in brine)
  • 10 g White onion
  • 10 g Carrots
  • 15 ml Fat free milk
  • 5 g Parsley
  • 2 g Salt
  • 2 g Pepper
