Mince Cottage Pie with Mashed Potato Topping

Directions
- Heat the oil in a medium pot over medium heat. Add the onions and fry for 5 minutes or until lightly golden.
- Add the mince and fry for a further 5 – 10 minutes until well-browned.
- Add the tinned tomatoes, tomato paste, herbs, salt, and pepper. Mix well, reduce the heat to a simmer and cook for 20 -25 minutes, until most of the liquid has reduced.
- Spoon the mixture into a medium oven-proof dish and top with seasoned mashed potato. Scatter with grated cheese and bake for 20 minutes, until golden and bubbling.
- Serve with cooked, frozen peas and tomato sauce.

- 15 ml Sunflower or vegetable oil
- 1 Onion, chopped
- 500 g Beef mince
- 2 cups chopped, tinned tomatoes
- 30 ml Tomato paste
- 5 ml Dried mixed herbs
- 5 ml Salt
- 5 ml Ground white pepper
- 6 Large potatoes, boiled & mashed
- 100 g Grated cheddar cheese
- Cooked frozen peas, to serve
- Tomato sauce, to serve
