Mini Potato pancakes with cream cheese and trout

Directions
- In a bowl, add grated potato, chives, egg and flour.
- Season with salt and pepper.
- Mix to form a stiff mixture.
- Heat a little oil in a pan and place a spoonful of potato mixture, press down with back of spoon and fry on both sides until golden brown.
- Remove and place on kitchen paper towel.
- Top the pancakes with cream cheese then trout.

- Chives, finely chopped
- 1 egg, beaten
- 2 tbsp flour
- Salt and pepper
- Oil for frying
- 1 cup cream cheese
- 100 g thinly sliced trout
