New potatoes in mixed herbs

Directions

  • Boil the potatoes, until just soft and drain.
  • Heat the coconut oil in a large pan and saute the garlic for a few seconds. Add the onion and toss through. Cook until the onions are soft.
  • Toss the potatoes with the onions, parsley, chives and serve as a side dish to a Sunday braai or with a delicious beef roast.

Ingredients

  • 1kg new potatoes, skin on
  • 30ml (1 tbsp) coconut oil
  • 2 garlic cloves, chopped
  • 10 baby onions or pickling onions, halved
  • 30ml (2 tbsp) fresh parsley, finely chopped
  • 15ml (1 tbsp) fresh chives, snipped
  • Salt, to taste
