Peppered Potato Rösti With Avocado

Directions
- <h3>Peppered Rösti</h3>
- Grate the potatoes and place them in water.
- Leave them to rest for 10 minutes
- Sauté the onions and pepper in the butter.
- Remove the grated potato from the water and dry with kitchen paper
- Pour the water from the potatoes slowly out of the bowl, so that all the starch remains at the bottom.
- Scrape the starch off the bottom of the bowl and add it to the grated potatoes.
- Mix the onion and pepper with the starchy potatoes, and season well.
- Mould into rounds, and cook on moderate heat for about 5 minutes per side or until cooked through
- <h3>Avocado</h3>
- Mix the onion, sour cream, lemon and salt.
- Coat the sour cream mix over the avocado and top with chive batons.

- 3 potatoes (grated)
- half an onion
- 30 g butter (clarified)
- 3 tbsp pepper
- salt to taste
- <h3>Avocado</h3>
- 1 avocado(sliced)
- 60 ml sour cream
- half a red onion (chopped)
- 1 bunch of chives (batons)
- juice of half a lemon
- salt to taste
