Peppered Potato Rösti With Avocado

Directions

  • <h3>Peppered Rösti</h3>
  • Grate the potatoes and place them in water.
  • Leave them to rest for 10 minutes
  • Sauté the onions and pepper in the butter.
  • Remove the grated potato from the water and dry with kitchen paper
  • Pour the water from the potatoes slowly out of the bowl, so that all the starch remains at the bottom.
  • Scrape the starch off the bottom of the bowl and add it to the grated potatoes.
  • Mix the onion and pepper with the starchy potatoes, and season well.
  • Mould into rounds, and cook on moderate heat for about 5 minutes per side or until cooked through
  • <h3>Avocado</h3>
  • Mix the onion, sour cream, lemon and salt.
  • Coat the sour cream mix over the avocado and top with chive batons.

  • 3 potatoes (grated)
  • half an onion
  • 30 g butter (clarified)
  • 3 tbsp pepper
  • salt to taste
  • <h3>Avocado</h3>
  • 1 avocado(sliced)
  • 60 ml sour cream
  • half a red onion (chopped)
  • 1 bunch of chives (batons)
  • juice of half a lemon
  • salt to taste
