Directions
- Pre-heat the oven to 160oC/320oF
- Slice the potato very thinly using a mandolin.
- Coat the potato slices with all the spices and bake in the oven for 40 minutes.
- In the meantime make the guacamole. Halve and pit the avocados and using a tablespoon scoop out their flesh and roughly mash with a fork.
- Mix in the tomato, red onion, lemon juice, parsley and coriander and tasting the guacamole, season with salt and pepper to your liking.
- Layer about 4 or 5 crispy potato slices spreading the guacamole in between each layer to form a tower.

- 2 large potatoes
- 5ml cumin
- 10ml paprika
- 1 chicken stock cube, crumbled
- 30ml olive oil
- 30ml butter
- 1 tsp chilli flakes

- 2 avocados
- 2 tomatoes, diced
- 1/2 red onion, diced
- Juice of 1 lemon
- 20ml parsley, finely chopped
- 20ml coriander, finely chopped
