Directions

  • Pre-heat the oven to 160oC/320oF
  • Slice the potato very thinly using a mandolin.
  • Coat the potato slices with all the spices and bake in the oven for 40 minutes.
  • In the meantime make the guacamole. Halve and pit the avocados and using a tablespoon scoop out their flesh and roughly mash with a fork.
  • Mix in the tomato, red onion, lemon juice, parsley and coriander and tasting the guacamole, season with salt and pepper to your liking.
  • Layer about 4 or 5 crispy potato slices spreading the guacamole in between each layer to form a tower.

  • 2 large potatoes
  • 5ml cumin
  • 10ml paprika
  • 1 chicken stock cube, crumbled
  • 30ml olive oil
  • 30ml butter
  • 1 tsp chilli flakes
  • <h3>Guacamole</h3>
  • 2 avocados
  • 2 tomatoes, diced
  • 1/2 red onion, diced
  • Juice of 1 lemon
  • 20ml parsley, finely chopped
  • 20ml coriander, finely chopped
