Potato and Chorizo Soft Tacos

Directions

  • Cook the potato in boiling salted water for 10 minutes or until just tender, drain and set aside.
  • Heat the Olive Oil in a frying pan over medium heat, add the chorizo and sauté until brown.
  • Using a slotted spoon, transfer chorizo to a plate, leaving oil in pan.
  • Add potato and onion, sauté for 5 minutes, stir in the spices, chorizo and coriander to warm through and season to taste with sea salt and ground black pepper.
  • Serve spooned into tortillas with Salsa, Guacamole and grated cheese.

Ingredients

  • 600 g Floury Potatoes, peeled and cubed
  • 2 tbsp Olive Oil
  • 1 Chorizo sausage, skin removed, coarsely chopped
  • 1 Red Onion, thinly sliced
  • ½ cup Coriander Leaves, coarsely torn
  • 1 tsp Cumin seeds
  • ½ tsp Chilli Flakes
  • ¼ tsp Cinnamon powder
  • To serve: Flour tortillas, fresh tomato salsa, Guacamole and grated mature cheese.
