Potato And Condensed Milk Salad

Serves 4 Sweet, salty, sour, crunchy and peppery all in one mouthful… the best potato salad ever!

Directions

  • In plenty of salted water, boil the potatoes until cooked (but make sure they are not mushy), about 15 -– 20 minutes. Drain, cool and coarsely chop.
  • Mix together the mayonnaise, condensed milk, amasi and mustard and spoon over the potatoes. Give it one good stir before adding the radishes, celery, bacon and lemon zest.
  • Sprinkle with the chives and serve.

  • 3 large potatoes, skin on and washed
  • 130 ml mayonnaise
  • 60 ml condensed milk
  • 60 ml amasi
  • 20 ml mild mustard
  • 2 radishes, sliced
  • 1 stalk celery, sliced
  • 5 rashers streaky bacon, chopped and pan fried
  • Zest of 1 lemon
  • Fresh chives, snipped to serve
