Potato And Cottage Cheese Tortellinis With Chive Cream

Directions

  • <h3>Pasta Dough</h3>
  • Mix mashed potato with flour, then add egg
  • Knead until nice and smooth.
  • Rest the dough for 1 hour.
  • <h3>Filling</h3>
  • Mix all ingredients together, and season well.
  • <h3>Chive Cream</h3>
  • Cook the onions for 5 minutes on a low heat.
  • Add the vinegar and reduce for 3 minutes.
  • Then add the cream and reduce until it reaches a sauce consistency.
  • Place the hot cream mixture into a blender and add the chives.
  • Blitz until light green in colour, and season well.
  • <h3>For the Tortellinis</h3>
  • Roll the pasta dough out into long thin sheets.
  • Cut out rounds with a cookie cutter.
  • Place the filling in the middle of the round pasta sheets.
  • Use your finger to glaze half the side of the circle with water.
  • Fold the circle into half.
  • Then fold the sides of the half moon over slightly, and wrap the two edges around your finger.

  • 200 g flour
  • 50 g mashed potato
  • 1 egg
  • <h3>Filling</h3>
  • half a red onion (finely chopped)
  • 100 g cottage cheese
  • 5 ml lemon juice
  • salt to taste
  • 1 tsp pepper
  • <h3>Chive Cream</h3>
  • 125 ml fresh cream
  • 100 ml chives
  • 2 tsp white wine vinegar
  • half an onion (chopped)
  • salt to taste
