Potato And Cottage Cheese Tortellinis With Chive Cream

Directions
- <h3>Pasta Dough</h3>
- Mix mashed potato with flour, then add egg
- Knead until nice and smooth.
- Rest the dough for 1 hour.
- <h3>Filling</h3>
- Mix all ingredients together, and season well.
- <h3>Chive Cream</h3>
- Cook the onions for 5 minutes on a low heat.
- Add the vinegar and reduce for 3 minutes.
- Then add the cream and reduce until it reaches a sauce consistency.
- Place the hot cream mixture into a blender and add the chives.
- Blitz until light green in colour, and season well.
- <h3>For the Tortellinis</h3>
- Roll the pasta dough out into long thin sheets.
- Cut out rounds with a cookie cutter.
- Place the filling in the middle of the round pasta sheets.
- Use your finger to glaze half the side of the circle with water.
- Fold the circle into half.
- Then fold the sides of the half moon over slightly, and wrap the two edges around your finger.

- 50 g mashed potato
- 1 egg
- <h3>Filling</h3>
- half a red onion (finely chopped)
- 100 g cottage cheese
- 5 ml lemon juice
- salt to taste
- 1 tsp pepper
- <h3>Chive Cream</h3>
- 125 ml fresh cream
- 100 ml chives
- 2 tsp white wine vinegar
- half an onion (chopped)
- salt to taste
