Potato and Ham Breakfast Frittata

Directions
- Heat the oil in a large non-stick frying pan over high heat. Add the onion to the pan and saute until golden.
- Add the chopped tomatoes, salt and pepper and fry until softened. Add the chopped potatoes, stir to coat and lower the heat to medium.
- Add the chopped ham to the pan and gently mix, followed by the beaten egg. Cook for 2 minutes, then pop under a hot grill for five minutes or until cooked through.
- Serve the frittata cut into wedges, with avocado (optional) and fresh coriander.

- 15 ml sunflower or vegetable oil
- 0.50 onion, finely chopped
- 2 tomatoes, chopped
- 2.50 ml salt
- 2.50 ml ground white pepper
- 2 large potatoes, boiled, peeled and chopped
- 4 slices of ham, chopped
- 8 eggs, beaten
- avocado, to serve (optional)
- fresh coriander, to serve
