Potato and Onion Triangles

Directions
- Heat the butter and oil in a large frying pan and sauté the garlic and onions.
- Add the potatoes and toss to combine with the garlic mixture and cook until the potatoes are al dente.
- Mix in the parsley and season. Lay a sheet of pastry on a working surface and spoon a little of the potato mixture.
- Fold to form a tight triangle.
- Heat enough oil to deep fry the triangles and drain on kitchen paper.
- Serve hot with the sweet chilli sauce.
Ingredients
- 30 ml (2 tbsp) butter
- 30 ml (2 tbsp) olive oil
- 1 garlic clove, finely chopped
- 2 SIFRA potatoes, peeled and roughly chopped and blanched
- 15 ml (1 tbsp) fresh flat-leaf parsley, finely chopped
- Salt and freshly ground black pepper, to taste
- Sweet chilli, for serving
