Potato and Onion Triangles

Directions

  • Heat the butter and oil in a large frying pan and sauté the garlic and onions.
  • Add the potatoes and toss to combine with the garlic mixture and cook until the potatoes are al dente.
  • Mix in the parsley and season. Lay a sheet of pastry on a working surface and spoon a little of the potato mixture.
  • Fold to form a tight triangle.
  • Heat enough oil to deep fry the triangles and drain on kitchen paper.
  • Serve hot with the sweet chilli sauce.

Ingredients

  • 30 ml (2 tbsp) butter
  • 30 ml (2 tbsp) olive oil
  • 1 garlic clove, finely chopped
  • 2 SIFRA potatoes, peeled and roughly chopped and blanched
  • 15 ml (1 tbsp) fresh flat-leaf parsley, finely chopped
  • Salt and freshly ground black pepper, to taste
  • Sweet chilli, for serving
