Potato, Bacon and Cheese Bread

Directions
- Preheat the oven to 180°C.
- In a large bowl, combine the grated potatoes, flour, baking powder, sugar, grated cheese, fried bacon, salt, corn, eggs, melted margarine or butter, and milk.
- Using a wooden spoon mix all ingredients well to form a soft, batter-like dough.
- Spoon the dough into a well-greased, standard-sized loaf pan. Scatter the remaining grated cheese on top and place it into the oven to bake for 1 hour.
- Gently insert a skewer into the bread after an hour. If the skewer comes out clean, the bread is ready.
- Remove from the oven and cool in the tin.
- Slice and serve with margarine or butter.
- Top Potato Tip: This bread also works well at a braai to accompany the meat and sides!

- 2 large potatoes, boiled, peeled and grated
- 625 ml cake flour
- 15 ml baking powder
- 100 g grated cheddar cheese + extra for scattering
- 3 rashers of streaky bacon, chopped & fried
- 2.50 ml salt
- 410 g corn, drained can
- 4 large eggs, beaten
- 60 ml melted margarine or butter + extra for greasing
- 250 ml milk
