Potato Bolognaise

Directions

  • Heat the oil in a large oven-proof pot or skillet over a medium high heat.
  • Add the onion and garlic and sauté for 2-3 minutes.
  • Turn the heat up to high and add the tomato paste and mince. Fry for 4-5 minutes until the beef is browned.
  • Add the stock and tomato and bring to a simmer. Simmer, covered, for 10 minutes.
  • Remove the lid and add the salt and basil and stir through.
  • Place the potatoes in the bolognaise but do not stir. Cover and simmer over a low heat for another 15 minutes.
  • Sprinkle the parmesan cheese on top.
  • Grill in the oven on high for 3-4 minutes.

  • 3 tbsp Oil, vegetable
  • 1 tbsp Garlic, crushed
  • 1 Onion, finely diced
  • 2 tbsp Tomato paste
  • 400 g Beef mince
  • 2 cups Beef stock
  • 1 Crushed tomato, tinned
  • 1 tbsp Sugar, white, granulated
  • 1 tsp Salt, fine
  • 1 tsp Basil, dried
  • 12 Baby potatoes, halved
  • ½ cup Parmesan, grated
