Potato Bolognaise

Directions
- Heat the oil in a large oven-proof pot or skillet over a medium high heat.
- Add the onion and garlic and sauté for 2-3 minutes.
- Turn the heat up to high and add the tomato paste and mince. Fry for 4-5 minutes until the beef is browned.
- Add the stock and tomato and bring to a simmer. Simmer, covered, for 10 minutes.
- Remove the lid and add the salt and basil and stir through.
- Place the potatoes in the bolognaise but do not stir. Cover and simmer over a low heat for another 15 minutes.
- Sprinkle the parmesan cheese on top.
- Grill in the oven on high for 3-4 minutes.

- 3 tbsp Oil, vegetable
- 1 tbsp Garlic, crushed
- 1 Onion, finely diced
- 2 tbsp Tomato paste
- 400 g Beef mince
- 2 cups Beef stock
- 1 Crushed tomato, tinned
- 1 tbsp Sugar, white, granulated
- 1 tsp Salt, fine
- 1 tsp Basil, dried
- 12 Baby potatoes, halved
- ½ cup Parmesan, grated
