Potato in jacket topped with fennel, tuna and green peas

Directions

  • Place potato into boiling water and boil for 15 to 20 minutes.
  • Chop fennel finely and mix with the tuna.
  • Just before the potato is cooked through; add the frozen peas to the boiling potato water.
  • Cook for 2 minutes, being wary not to cook for too long; you don’t want mushy peas.
  • When the potato is completed cooked; removed from the water.
  • Cut in half and place the tuna and fennel mix on top.
  • Finish with the peas, and sprinkle with salt and coarse black pepper, to taste.
  • An amazing quick, and healthy meal.

  • 1 Medium Potato
  • 100 g Shredded tuna in brine
  • 5 g Fennel
  • 10 g Spring onion
  • 20 g Green peas – frozen
  • 2 g Salt
  • 2 g Coarse Black Pepper
