Potato Mash Wrapped With Bacon

Serves 4
A dome of herby, cheesy mashed potatoes encased in crispy bacon!


  • 60 ml butter
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 3 potatoes, skin on and parboiled
  • 10 ml fresh peas, parboiled
  • 100 g fresh peas, parboiled
  • 30 ml fresh parsley, chopped
  • 150 g gouda, grated
  • fresh breadcrumbs
  • Salt and freshly ground black pepper, to taste
  • 200 g streaky bacon


  1. Preheat the oven to 180°C.
  2. Melt 30 ml of the butter in a frying pan and sauté the onion and garlic for a few minutes.
  3. Put the potatoes into a pot and, over low heat, mash with a potato masher. Add the remaining butter, the onion mixture, milk, peas, parsley, gouda, breadcrumbs, and season to taste.
  4. Brush the inside of a 16 cm bowl with a little oil. Spoon the potato mixture into the bowl and turn it over into a baking dish, allowing the moulded potato mixture to fall out into the dish.
  5. Layer the bacon slices over the potato dome and bake until the bacon is crispy, about 20 minutes. Serve with a green salad.
