Potato Mash Wrapped With Bacon

Serves 4. A dome of herby, cheesy mashed potatoes encased in crispy bacon!

Directions

  • Preheat the oven to 180°C.
  • Melt 30 ml of the butter in a frying pan and sauté the onion and garlic for a few minutes.
  • Put the potatoes into a pot and, over low heat, mash with a potato masher. Add the remaining butter, the onion mixture, milk, peas, parsley, gouda, breadcrumbs, and season to taste.
  • Brush the inside of a 16 cm bowl with a little oil. Spoon the potato mixture into the bowl and turn it over into a baking dish, allowing the moulded potato mixture to fall out into the dish.
  • Layer the bacon slices over the potato dome and bake until the bacon is crispy, about 20 minutes. Serve with a green salad.

  • 60 ml butter
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 3 potatoes, skin on and parboiled
  • 10 ml fresh peas, parboiled
  • 100 g fresh peas, parboiled
  • 30 ml fresh parsley, chopped
  • 150 g gouda, grated
  • fresh breadcrumbs
  • Salt and freshly ground black pepper, to taste
  • 200 g streaky bacon
