Potato, Onion and Cheese Fingers

Directions
- Melt the butter in a large frying pan and sauté the onions until translucent
- Put the mash into a mixing bowl and combine with the egg, onion mixture, cheese and season
- Divide into 12 balls and roll each ball into a short sausage and dust with flour.
- Refrigerate for about 1 hour.
- Heat vegetable oil in a frying pan and shallow fry until golden.
- Serve with a dip of choice

- 60 ml (¼ cup) butter
- 1 onion, finely chopped
- 4 potatoes, mashed
- 1 large egg, lightly beaten
- 240 g cheddar, grated
- Salt to taste
- Cake flour for dusting
