Potato Rolls

Directions

  • Activate the yeast by sprinkling it into a bowl of warm water. Allow it to stand for approximately 5 minutes until it softens and develops a creamy, frothy layer on top.
  • Combine milk, mashed potatoes, stock, sugar, and salt in a bowl, stirring thoroughly until the mixture is smooth and well-blended.
  • Add yeast mixture and egg.
  • Gradually add 2 cups of flour to the mixture, stirring until fully incorporated. Then, gradually add in the remaining 2 1/2 cups of flour until a soft dough forms.
  • Place the dough onto a lightly floured surface and knead it for approximately 7 minutes until it becomes smooth and elastic.
  • Put the dough into a bowl lightly greased with oil, ensuring all sides are coated, and then rotate it once to evenly distribute the oil.
  • Cover the bowl with a clean kitchen towel or plastic wrap and place it in a warm spot. Allow the dough to rise until it doubles in size, which should take approximately 1 hour.
  • After punching the dough down, shape it into a ball and cover the bowl once more. Let it rest for 10 minutes.
  • Preheat the oven to 200 degrees C. Grease two baking sheets.
  • Shape dough into 24 rolls. Place rolls onto the prepared baking sheets and let rise until dough springs back when you touch the side of a roll with your fingertip, 25 to 40 minutes.
  • Place the rolls in the preheated oven and bake them until they turn a golden brown colour, which typically takes around 10 to 12 minutes.
  • Enjoy with any filling of your choice! These rolls are excellent for freezing, and when you split them open and toast them, they become even more delicious.
