Potato samoosa

Directions
- Dribble peanut oil into a pan and place the onions, garlic, ginger and the chilli.
- Fry for 5 minutes then add the curry powder and fry lightly
- Remove from the heat and allow the mixture to cool.
- In the bowl with the mashed potatoes, add the pan mixture, coriander, spinach and mix well
- Season with salt and pepper to taste. Dip in flour, then egg and finally into bread crumbs.
- Deep fry and serve hot

- 2 Potatoes diced ½ cm cubes
- 1 Chopped onion
- 1 Cloves garlic chopped
- 1 tsp Chopped ginger
- 2 Chopped chillies
- 1 tsp Black mustard seeds
- 1 tsp Ground coriander
- 1 tsp Ground cumin
- 50 g Butter
- Salt and pepper to taste
- Spring roll pastry

- 100 g Chopped onions
- 20 g Chopped garlic
- 20 g Chopped ginger
- 50 g Chopped coriander
- 10 g Chopped chili
- 10 g Curry powder
- 200 g Blanched spinach, chopped
