Potatoes and mince mini bakes

Directions

  • Preheat the oven to 180°C
  • Lightly grease a 6 hole muffin tray.
  • Heat the oil and butter and sauté the garlic and onion for a few minutes
  • Add the mince and stir to combine.
  • Keep in the oven until the mince is cooked.
  • Stir in the parsley and season
  • Deep fry the potatoes, until golden and drain
  • Lay the potatoes in the muffin tray as well as the sides
  • Spoon the mince in the centre alternating layers with the mozzarella
  • Bake until the cheese has melted
  • Serve the potato and mince bake with a fresh green salad.

Ingredients

  • 15 ml (1 tbsp) olive oil
  • 20 ml butter
  • 1 garlic clove, finely chopped
  • 1 onion, finely chopped
  • 30 ml (2 tbsp) fresh flat-leaf parsley, finely chopped
  • Zest and juice of 1 lemon
  • Salt and freshly ground black pepper, to taste
  • 4 large potatoes, thinly sliced
