Potatoes and mince mini bakes

Directions
- Preheat the oven to 180°C
- Lightly grease a 6 hole muffin tray.
- Heat the oil and butter and sauté the garlic and onion for a few minutes
- Add the mince and stir to combine.
- Keep in the oven until the mince is cooked.
- Stir in the parsley and season
- Deep fry the potatoes, until golden and drain
- Lay the potatoes in the muffin tray as well as the sides
- Spoon the mince in the centre alternating layers with the mozzarella
- Bake until the cheese has melted
- Serve the potato and mince bake with a fresh green salad.
Ingredients
- 15 ml (1 tbsp) olive oil
- 20 ml butter
- 1 garlic clove, finely chopped
- 1 onion, finely chopped
- 30 ml (2 tbsp) fresh flat-leaf parsley, finely chopped
- Zest and juice of 1 lemon
- Salt and freshly ground black pepper, to taste
- 4 large potatoes, thinly sliced
