Directions

  • <h3>For the Leather</h3>
  • Bring a saucepan to a moderate heat and add the prunes, sliced apple, water and sugar
  • Cook for 15 minutes until the liquid is reduced to half.
  • Blitz until smooth.
  • Spread the mixture thinly over a silicon mat and dry in the oven at 70°C for 45 minutes.
  • <h3>Spicy Potato Filling</h3>
  • Bring a frying pan to a moderate heat and add the sesame oil, potatoes, peppers and garlic
  • Cook until nice and brown, then add the vinegar, sugar and chilli
  • Bring pan to a low heat and cook the vegetables through.
  • Finish off with chives.
  • <h3>For the Rolls</h3>
  • Cut the leather in rectangular sheets and place the filling on the bottom half.
  • Roll the filling tightly into the leather and bake at 100°C for 10 minutes

  • half cup sliced apple
  • 125 ml sugar
  • 300 ml water
  • <h3>Spicy Potato Filling</h3>
  • 2 medium potatoes (julienne)
  • 1 tbsp sesame oil
  • 2 cloves garlic (chopped)
  • 1 tbsp rice wine vinegar
  • half tbs sugar
  • 1 chilli (finely chopped)
  • 4 tbsp chives (chopped)
  • 1 green pepper (julienne)
  • 1 red pepper (julienne)
