Directions
- <h3>For the Leather</h3>
- Bring a saucepan to a moderate heat and add the prunes, sliced apple, water and sugar
- Cook for 15 minutes until the liquid is reduced to half.
- Blitz until smooth.
- Spread the mixture thinly over a silicon mat and dry in the oven at 70°C for 45 minutes.
- <h3>Spicy Potato Filling</h3>
- Bring a frying pan to a moderate heat and add the sesame oil, potatoes, peppers and garlic
- Cook until nice and brown, then add the vinegar, sugar and chilli
- Bring pan to a low heat and cook the vegetables through.
- Finish off with chives.
- <h3>For the Rolls</h3>
- Cut the leather in rectangular sheets and place the filling on the bottom half.
- Roll the filling tightly into the leather and bake at 100°C for 10 minutes

- <h3>Spicy Potato Filling</h3>
- 2 medium potatoes (julienne)
- 1 tbsp sesame oil
- 2 cloves garlic (chopped)
- 1 tbsp rice wine vinegar
- half tbs sugar
- 1 chilli (finely chopped)
- 4 tbsp chives (chopped)
- 1 green pepper (julienne)
- 1 red pepper (julienne)
