Roasted Lemon and coconut Potato Salad

Directions
- Pre-heat oven to 180C. In a large roasting pan, heat coconut oil and add potatoes, rosemary and garlic.
- Place in oven and roast for 30 minutes until crispy.
- Remove from pan and immediately pour juice and rind, toss together. Serve.

- 400 g Fir potato, sliced
- ½ cup coconut oil
- 1 lemon juice and rind
- Salt and pepper to taste
