Roasted Lemon and coconut Potato Salad

Directions

  • Pre-heat oven to 180C. In a large roasting pan, heat coconut oil and add potatoes, rosemary and garlic.
  • Place in oven and roast for 30 minutes until crispy.
  • Remove from pan and immediately pour juice and rind, toss together. Serve.

Ingredients

  • 400 g Fir potato, sliced
  • ½ cup coconut oil
  • 1 lemon juice and rind
  • Salt and pepper to taste
