Spicy Potato and Pumpkin Cakes

Directions
- Sauté the onions in olive oil.
- Add the spices, stir and cook for about 3 minutes to release the flavours
- Add the grated potato, chutney and stir until combined.
- Sauté until cooked, this should take about 5-10 minutes
- Remove from heat, mix in the mashed pumpkin, chopped coriander and adjust seasoning
- Shape into patties, coat with flour, then eggs, then breadcrumbs and shallow fry until golden.
- Drain on paper towel to remove any excess oil.
- Serve with lemon wedges.

- 30 ml olive oil
- 1 onion, chopped
- 15 ml curry powder
- 5 ml ground cumin
- 5 ml ground coriander
- 600 g potatoes, peeled and grated
- 30 ml chutney
- 500 ml pumpkin, cooked and mashed
- Salt and pepper to taste
- 30 ml fresh coriander, chopped
- 2 eggs
- 250 ml flour, for coating
- 500 ml breadcrumbs, for coating
- Lemon wedges to serve
