Spicy Potato and Pumpkin Cakes

Directions

  • Sauté the onions in olive oil.
  • Add the spices, stir and cook for about 3 minutes to release the flavours
  • Add the grated potato, chutney and stir until combined.
  • Sauté until cooked, this should take about 5-10 minutes
  • Remove from heat, mix in the mashed pumpkin, chopped coriander and adjust seasoning
  • Shape into patties, coat with flour, then eggs, then breadcrumbs and shallow fry until golden.
  • Drain on paper towel to remove any excess oil.
  • Serve with lemon wedges.

Ingredients

  • 30 ml olive oil
  • 1 onion, chopped
  • 15 ml curry powder
  • 5 ml ground cumin
  • 5 ml ground coriander
  • 600 g potatoes, peeled and grated
  • 30 ml chutney
  • 500 ml pumpkin, cooked and mashed
  • Salt and pepper to taste
  • 30 ml fresh coriander, chopped
  • 2 eggs
  • 250 ml flour, for coating
  • 500 ml breadcrumbs, for coating
  • Lemon wedges to serve
