Directions
- Preheat the oven to 180°C. Lightly grease a 12 hole muffin cups and set aside.
- In a large mixing bowl, combine the flour, sugar, salt, baking powder and cinnamon.
- Add the eggs, oil, potatoes and vanilla essence. Beat until combined. Stir in the pineapple and raisins.
- Fill the cups ¾ full and bake until a toothpick inserted in the centre comes out clean. Cool for 5 minutes before removing and setting them on a cooling rack to cool completely before decorating.

- <h3>CHAKALAKA:</h3>
- 10 ml (2 tsp) sunflower oil
- 1 large onion
- 3 garlic cloves
- 30 ml (2 tbsp) tomato paste
- 1 g mild chakalaka
- 1 g baked beans, drained
- <h3>CREAMY MASH:</h3>
- 1 kg potatoes, peeled
- 150 ml milk or mageu
- 15 ml butter
- 1 large egg
- Salt and pepper, to taste
