Three Cheese Potato Bake
Serves 4. A pillowy, cheesy side disk of dreams!

Directions
- Preheat the oven to 180°C.
- Mix all the cheeses together and set them aside. Reserve a little for the topping.
- In a large frying pan with deep sides, melt the butter over medium heat. Stir in the salt and pepper, then add the flour and whisk to combine. Slowly pour in the warm milk, whisking continuously, until the mixture has thickened.
- Add the combined cheeses, a little bit at a time, stirring until all the cheese has been added and completely melted into the sauce. Remove from the heat.
- Place a layer of potatoes into a 20 cm baking dish and sprinkle with a little chopped spring onion and drizzle with some cheese sauce. Continue to layer, sprinkle and drizzle until all the ingredients are used. Sprinkle the top with the reserved cheese and bake until the potatoes are soft, and the cheese is golden and crispy.

- 125 ml cheddar, grated
- 125 ml mozzarella, grated
- 125 ml gouda, grated
- 40 ml butter
- 2.50 ml salt
- 1.50 ml ground white pepper
- 10 ml cake flour
- 300 ml full cream milk, warmed
- 3 large potatoes, skin on, washed and sliced
- 2 spring onions, sliced
