Directions
- Preheat the oven to 200°C and line a baking sheet with baking paper
- Mix the spices well together and set aside until needed
- Carefully push a skewer through the centre of each potato and using a small sharp knife push the knife in one end of the potato until it reaches the skewer. Rotate the potato around as you create a spiral shape through the whole potato – try keep it even slices. Release the slices to uncoil along the skewer
- Brush thoroughly each potato with the oil and then sprinkle liberally with the spice mixture. Place the potatoes skewers on the baking tray and bake until they are cooked through and crispy on the outside, for (+/-30 – 40 minutes)
- Prepare the mayonnaise by mixing all the ingredients well together. Serve the spirals with the pink mayonnaise
Ingredients
- 15ml (1 tbsp) dried oregano
- 15ml (1 tbsp) dried paprika
- 15ml (1 tbsp) fresh thyme, leaves only
- 15ml (1 tbsp) dried chili
- 12 potatoes, skin on
- Salt, to taste
- 45ml (3 tbsp) sunflower oil
- <h3>Dressing</h3>
- 500ml (2 cups) ready-made mayonnaise
- 60ml (¼ cup) tomato sauce
- 15ml (1 tbsp) honey
