New potatoes in mixed herbs

Ingredients
- 1kg new potatoes, skin on
- 30ml (1 tbsp) coconut oil
- 2 garlic cloves, chopped
- 10 baby onions or pickling onions, halved
- 30ml (2 tbsp) fresh parsley, finely chopped
- 15ml (1 tbsp) fresh chives, snipped
- Salt, to taste
Directions
- Boil the potatoes, until just soft and drain.
- Heat the coconut oil in a large pan and saute the garlic for a few seconds. Add the onion and toss through. Cook until the onions are soft.
- Toss the potatoes with the onions, parsley, chives and serve as a side dish to a Sunday braai or with a delicious beef roast.
