Spicy Roast Potatoes
Serving: 4 as a side dish
Ingredients
- 4 medium Potatoes, with skin (360g), cut into wedges
- 1 tbsp Olive Oil
- 3 garlic cloves, finely chopped
- ½ tsp cayenne
- 1 tsp chilli powder
- 1 tsp dried mixed herbs
Directions
- Heat the oven to 180-200°C.
- Mix the oil, garlic, cayenne, chilli powder and mixed herbs in a large bowl.
- Toss the potato wedges through the oil and spice mix until well coated and glossy.
- Pour onto a baking tray or oven baking dish and season with ½ tsp. salt and black pepper to taste.
- Bake for 30-40 minutes until golden and tender, tossing the wedges 1-2 times during the cooking process.
- Serve as a side to any protein or as a snack with a nutritious/ low fat dip such as tzatziki or hummus.
