Spicy Roast Potatoes

Serving: 4 as a side dish

Ingredients

  • 4 medium Potatoes, with skin (360g), cut into wedges
  • 1 tbsp Olive Oil
  • 3 garlic cloves, finely chopped
  • ½ tsp cayenne
  • 1 tsp chilli powder
  • 1 tsp dried mixed herbs

Directions

  1. Heat the oven to 180-200°C.
  2. Mix the oil, garlic, cayenne, chilli powder and mixed herbs in a large bowl.
  3. Toss the potato wedges through the oil and spice mix until well coated and glossy.
  4. Pour onto a baking tray or oven baking dish and season with ½ tsp. salt and black pepper to taste.
  5. Bake for 30-40 minutes until golden and tender, tossing the wedges 1-2 times during the cooking process.
  6. Serve as a side to any protein or as a snack with a nutritious/ low fat dip such as tzatziki or hummus.
