Stuffed potatoes with garlic and paprika chicken breast

Ingredients

  • 1.5kg potatoes, halved
  • 120ml olive oil
  • Salt, to taste
  • 4 chicken breasts
  • 2 red peppers, seeded and chopped
  • 2 green peppers, seeded and chopped
  • 3 garlic cloves, finely chopped
  • 15ml (1 tbsp) ground paprika
  • 10ml (2 tsp) ground cumin
  • 15ml (1 tbsp) fresh ginger
  • 3 tomatoes, roughly chopped
  • 1 lettuce head, roughly chopped
  • 250ml (1 cup) mayonnaise

Directions

  1. Preheat the oven to 180°C and line 2 baking trays with baking paper
  2. Rub the potato halves with 45ml (3 tbsp) of the oil and season. Place in the first baking tray and bake until cooked for (+/- 30 minutes). Remove and scoop out the flesh leaving the potato skin intact. Set aside until needed
  3. In the other baking tray put the chicken breasts and peppers with all the other ingredients and rub well to combine. Bake until the chicken is cooked through, season well. Remove and roughly chop
  4. To serve, place the potato halves on a serving tray. Mix some of the potato flesh with the chicken pieces as well as the pepper, tomato and lettuce and refill the potato skin. Drizzle with the mayonnaise and serve
