Potato Latkes

Makes 16 tasty latkes.

Ingredients

  • 3 to 4 peeled potatoes
  • 1 small yellow onion
  • 2 large eggs
  • 125ml breadcrumbs
  • 5ml salt
  • Fresh ground black pepper to taste

Directions

  1. Grate the potatoes and onion on the large holes of a grater.
  2. Transfer the grated potato and onion mixture to a clean kitchen towel. Pull up the sides of the towel to form a pouch, then squeeze out as much moisture as possible from the mixture. This will help ensure that your latkes become crispy when cooked.
  3. Once you've squeezed out the excess moisture, place the potato and onion mixture in a large bowl. This will be the base for your latkes.
  4. To the potato mixture in the large bowl, add the eggs, bread crumbs, salt, and pepper. Stir the ingredients together until they are well combined. This will help bind the latkes and add flavour and texture.
  5. Grease the racks or basket of the air fryer with cooking spray to prevent the latkes from sticking during cooking. This will also help ensure that they crisp up nicely.
  6. Drop the potato mixture in 2 to 3 tablespoon dollops into the air fryer basket or onto the racks, flattening the top of each dollop to form a patty shape. It's important not to overcrowd the air fryer to ensure even cooking.
  7. Arrange the latkes in one single layer, leaving some space between each one. Depending on the size of your air fryer, you may need to cook them in batches to ensure they cook properly.
  8. Spray the tops of the latkes with cooking spray. This will help them crisp up and develop a golden brown colour during cooking.
  9. Cook the latkes in the air fryer for 8 minutes. This should give them enough time to become golden brown and crispy on the outside while remaining tender on the inside.
