Curried Cumin Potatoes

Serving: 6 as a side dish

Ingredients

  • 4 medium Potatoes, with skin (360g), diced
  • 2 tbsp Canola Oil
  • 2 tbsp cumin seed
  • 2 tsp ground turmeric
  • 2 tsp curry powder
  • ½ tsp salt
  • 1 tsp ground black pepper
  • 3 tbsp chopped fresh coriander

Directions

  1. Place diced potatoes into a pot with water to cover.
  2. Bring to a boil, and cook until just tender.
  3. Drain, and set aside covered, to keep warm.
  4. In a large frying pan, heat oil to medium heat before adding the cumin, turmeric, and curry powder, sauté for 1-2 minutes
  5. Add the potatoes, and cook until golden brown and toasted.
  6. Toss potatoes with salt, pepper and fresh coriander, and serve hot.
