Grilled Potato and Haloumi Kebabs
Serving: Makes 6-8 kebabs
Ingredients
- 200 g baby potato, washed
- ⅓ cup olive oil
- Handful basil leaves, finely chopped
- 1 lemon, juice & rind
- Salt and pepper to taste
- 200 g haloumi cheese, cubed
- 100 g cocktail tomatoes
Directions
- Boil potatoes in water for about 15minutes. Drain and set aside.
- In a deep large bowl, mix together olive oil, basil, lemon, salt and pepper to taste. Add potatoes, tomatoes & haloumi cheese and marinate for about 10 minutes.
- Preheat a griller and grill potatoes first for about 10 minutes, then thread skewer with potato, cheese, tomato and another potato.
- Return to grill for 3 minutes on each side, brushing with marinate for flavor. Serve.
