Classic Potato Salad

Serves 4
The perfect side dish for any grilled meat or chicken.

Ingredients

  • 3 large potatoes, skin on and cubed
  • 125 ml sour cream
  • 180 ml mayonnaise
  • 15 ml mild mustard
  • 3 pickled gherkins, chopped
  • ½ red onion, finely sliced
  • 3 large eggs, soft boiled
  • 1.50 ml finely ground black pepper
  • Chopped fresh chives, to serve

Directions

  1. In plenty of boiling water, cook the potatoes until just tender, 30 -– 40 minutes. Drain and set aside to cool.
  2. In a large mixing bowl, combine the sour cream, mayonnaise, mustard and gherkins.
  3. Add the potatoes and gently mix to coat well.
  4. To serve, spoon the potato mixture into a serving dish, top with the onion slices, eggs, black pepper and chives.
