Classic Potato Salad
Serves 4
The perfect side dish for any grilled meat or chicken.
Ingredients
- 3 large potatoes, skin on and cubed
- 125 ml sour cream
- 180 ml mayonnaise
- 15 ml mild mustard
- 3 pickled gherkins, chopped
- ½ red onion, finely sliced
- 3 large eggs, soft boiled
- 1.50 ml finely ground black pepper
- Chopped fresh chives, to serve
Directions
- In plenty of boiling water, cook the potatoes until just tender, 30 -– 40 minutes. Drain and set aside to cool.
- In a large mixing bowl, combine the sour cream, mayonnaise, mustard and gherkins.
- Add the potatoes and gently mix to coat well.
- To serve, spoon the potato mixture into a serving dish, top with the onion slices, eggs, black pepper and chives.
