Ingredients

  • 30 ml paprika
  • 2.50 ml salt
  • 10 ml garlic salt
  • 5 ml cayenne pepper
  • 2 large potatoes, washed and thinly sliced
  • Vegetable oil, to fry

Directions

  1. Mix the paprika, salt, garlic salt and cayenne pepper together very well and set aside.
  2. In a large mixing bowl, add enough iced water to cover the potatoes and leave to soak for about an hour.
  3. Run cold water over the potatoes to release more starch. Drain and dry the potatoes in batches using paper towels until well dried.
  4. Heat oil in a large pot and carefully fry the potatoes in batches until crispy and golden. Drain thoroughly on paper towels.
  5. Place the chips into a large mixing bowl and use a sieve to sprinkle the paprika seasoning over the chips. Toss to combine. Allow the chips to cool completely before serving
