Oven-Baked Potato Served With Grilled Fish

Mixed vegetables of your choice

Ingredients

  • 1 kg baby potatoes, with the skin on, halved
  • 45 ml (3 tbsp) olive oil
  • 10 ml (2 tsp) coarse salt and black pepper
  • 15 ml (1 tbsp) crushed garlic
  • 45 ml (3 tbsp) hot melted butter

Directions

  1. Preheat the oven to 180°C
  2. Toss the potatoes with the oil and season well. Bake (+/- 30 minutes)
  3. Whisk the garlic and hot butter and pour over the potatoes. Toss to combine well and continue to bake f(+/- 10 minutes)
  4. Serve the potatoes with fish and your choice of steamed vegetables
