Potato Candy

Ingredients

  • 250ml plain mashed potatoes
  • 250ml salted butter softened
  • 6-7 cups icing sugar plus additional for dusting
  • 10ml vanilla extract
  • Creamy peanut butter for filling

Directions

  1. In a large bowl, combine mashed potatoes, butter, and one cup of sugar. Use an electric mixer to beat the mixture until well combined
  2. Continue adding the remaining icing sugar, one cup at a time, stirring until combined after each addition. After adding 6 cups of powdered sugar, check the consistency of the dough. If it's not firm enough to be molded into a ball with your hands, continue adding sugar until you achieve the desired firmness.
  3. Add in the vanilla extract.
  4. After mixing the dough thoroughly, refrigerate it for at least 30 to 60 minutes. Be cautious not to chill it for too long, as it may become too firm and brittle. If you do refrigerate it longer and it becomes too firm, allow it to sit at room temperature for 10 to 15 minutes until it becomes flexible again.
  5. Once the dough has chilled, divide it into two equal pieces. Place one piece on a clean surface that you've generously dusted with icing sugar. Dust the surface of the dough with additional icing sugar to prevent sticking.
  6. Using a rolling pin, roll out the dough into a rectangle approximately 5mm thick. If the dough is too sticky or falling apart, you may need to add more icing sugar, reshape it into a ball, and start the rolling process again
  7. Once you have rolled the dough into a rectangle, spread the peanut butter evenly over the surface, leaving a small border around the perimeter of the dough without peanut butter. This border will help seal the dough when you roll it up.
  8. Starting with the longer side of the rectangle, gently but tightly roll the dough into a log shape. Be careful to keep the roll tight to ensure even layers and prevent air bubbles.
  9. Use a sharp knife to cut the rolled dough into slices about ¼ to ½ inch thick. A harp knife, with its serrated edge, can be particularly effective for this task, ensuring clean and even slices.
  10. Serve and enjoy your homemade peanut butter candy slices! If you have any leftovers, store them in an airtight container in the refrigerator. They should stay fresh for up to a week.
