Potato Rolls

Makes 24 delicious golden rolls. Taste the crunchiness in every bite!

Ingredients

  • 2 ¼ teaspoons active dry yeast
  • ¼ cup warm water
  • 1 cup warmed milk cooled down
  • ½ cup prepared mashed potatoes
  • ¼ cup vegetable stock
  • ¼ cup white sugar
  • 1 ½ teaspoons salt
  • 1 large egg, beaten
  • 4 ½ cups all-purpose flour

Directions

  1. Activate the yeast by sprinkling it into a bowl of warm water. Allow it to stand for approximately 5 minutes until it softens and develops a creamy, frothy layer on top.
  2. Combine milk, mashed potatoes, stock, sugar, and salt in a bowl, stirring thoroughly until the mixture is smooth and well-blended.
  3. Add yeast mixture and egg.
  4. Gradually add 2 cups of flour to the mixture, stirring until fully incorporated. Then, gradually add in the remaining 2 1/2 cups of flour until a soft dough forms.
  5. Place the dough onto a lightly floured surface and knead it for approximately 7 minutes until it becomes smooth and elastic.
  6. Put the dough into a bowl lightly greased with oil, ensuring all sides are coated, and then rotate it once to evenly distribute the oil.
  7. Cover the bowl with a clean kitchen towel or plastic wrap and place it in a warm spot. Allow the dough to rise until it doubles in size, which should take approximately 1 hour.
  8. After punching the dough down, shape it into a ball and cover the bowl once more. Let it rest for 10 minutes.
  9. Preheat the oven to 200 degrees C. Grease two baking sheets.
  10. Shape dough into 24 rolls. Place rolls onto the prepared baking sheets and let rise until dough springs back when you touch the side of a roll with your fingertip, 25 to 40 minutes.
  11. Place the rolls in the preheated oven and bake them until they turn a golden brown colour, which typically takes around 10 to 12 minutes.
  12. Enjoy with any filling of your choice! These rolls are excellent for freezing, and when you split them open and toast them, they become even more delicious.
